Tulaipanji is known for its aroma, lightness, and jasmine-white appearance when cooked. Tulaipanji is an indigenous aromatic rice grown mainly in the North Dinajpur district of West Bengal. The aroma and quality of this rice variety are strongly associated with its native origin. One of the main features of Tulaipanji rice is that the grains can retain the aroma for around a year or more. The medium-long, slender Tulaipanji is tasty and good in texture when cooked, turning out to be whitish-yellow, non-sticky, and friable due to its protein and high amylose content. The rice is excellent for the preparation of pulao, fried rice, biryani, and payesh (a sweet dish).
